Tasmanian atlantic salmon






Try this healthy, easy-to-prepare salmon dish.
Preparation time 5 mins, cooking 25-30 mins.
Serves 4

Ingredients
4x 125gms Tasmanian Atlantic Salmon
500 gms prepared gnocchi
250 gms cherry or tear drop yellow tomatoes cut in half
2 tbsp capers drained
2 tbsp roughly chopped black Kalamata olives
1 tbsp extra virgin olive oil
1 tbsp freshly grated parmesan
Salt and ground black pepper

Method
Preheat oven to 1800C. 
Place salmon into a shallow baking dish. Scatter over tomatoes, capers, olives and drizzle with olive oil. 
Season with salt and pepper. 
Bake salmon for 20-30 mins until cooked. 
Cook gnocchi. Mix some of the tomatoes & capers through the cooked gnocchi. 
Serve salmon and gnocchi with grated fresh parmesan.
