Tuscan apple cake

Serves 12. Preparation 15 min. Cooking 45 min. 698kJ p serve.

Ingredients

2 large eggs
1/4 cup caster sugar
200g plain flour
2 teaspoons baking powder
2 teaspoons grated lemon zest
2/3 cup low-fat milk
800g golden delicious apples, peeled, cored and thinly sliced
1/4 cup demerara sugar

Method

  1. Preheat oven to 1800C (1600C fan). Lightly spray a non-stick, 22cm springform tin with oil. Dust with a little flour. Set aside.
  2. Whisk eggs until pale, add 1/4 cup sugar, beat well. Whisk in flour, baking powder, lemon zest. Slowly whisk in milk. Set aside 15 mins.
  3. Pour batter into prepared tin, arrange apples on top, pressing down so all fit. Sprinkle with demerara sugar. Bake 45 mins or until testing skewer comes out clean.
  4. Cool on wire rack (5 mins). Run knife around edge and release spring. Place on platter. Serve warm or at room temp. Dust with icing sugar.
